Pizza party al fresco in Umbria + a delicious pizza dough recipe

 Hello everyone!
Today is the first day of September and it already feels like autumn here. Nothing against Autumn, but I just feel the need to remember those long summer nights we had in Umbria at the beginning of August with my family.
We stayed for a week in a beautiful villa surrounded by woods of oaks and chestnut trees, with a stunning view on the valley.
One of the great things about the casale del gallo, was its patio, where we had candle light dinners every night, and its outdoor pizza oven, which made us truly feel like we were in Italy!
My nephews and nieces decided to make some pizza for us one evening and it was so delicious and beautiful that I wanted to share the recipe with you as well as some impressions of this beautiful evening.

 So here comes the recipe!

Pizza Dough
Serves 6
A delicious pizza recipe given to me by my nephew, tasted in Umbria

Ingredients
  1. - 1 kg of flour
  2. - 1/2 litre of water
  3. - the equivalent of 50g of baker’s yeast
  4. - 20 g of salt
  5. - 2 – 3 teaspoons of olive oil
Instructions
  1. Mix the water, yeast and salt and leave the mixture to rest for approximately ten minutes until a thick, brown foam appears on the top of the mixture. Then incorporate the flour.
  2. Mix by hand and once the mixture has become less sticky, add a couple of teaspoons of olive oil and continue to knead until the mixture becomes a smooth dough that no longer sticks to one’s hands.
  3. Leave the dough to rest for one to two hours in a bowl covered with a damp cloth near a source of warmth (such as a radiator, fireplace or somewhere sunny in summer).
  4. Re-knead the dough for a further 15 minutes and then form six equal-sized balls of dough and wrap them in cling film and place in the fridge. Remove the balls of dough ten minutes prior to making the pizzas, by rolling the dough into whatever form fits the oven best.
